Taste 10: Leeks & Tomatoes – 味覚 10:リーカとトマト

I can’t quite remember where this recipe came from although my mom and I seem to think it came from the Denver Post.  If anyone knows for sure, let me know!

This recipe is SO EASY (just how I like it)!  It’s also a good recipe to test with different kind of fish/meat.  The original recipe calls for Cod however I mainly use Tilapia, most likely any white fish would do.  I think chicken would also work well.

Yet another lovely thing about this recipe is the aroma of the leeks after being cooked… makes me what to cook leeks more often.

Wash your leeks well!

Cod (Tilapia/Chicken) with Leeks and Tomatoes

2 medium leeks, white and light-green part only, thinly sliced, rinsed well, patted dry (leeks are really dirty so rinse well!)
1 tsp freshly grated lemon zest
2 tbsp fresh lemon juice
1 tbsp olive oil
3 sprigs thyme or 1 tsp dried thyme
course salt and fresh ground pepper
2 1/2 cups cherry tomatoes (about 12 oz)
4 cod/tilapia fillet, each 6 to 8 oz and 3/4 to 1 inch thick

Preheat oven to 450 degrees.  In a 9-by-13 inch baking dish, toss together leeks, lemon zest, lemon juice, oil, thyme, 1/2 tsp salt and 1/4 tsp pepper.  Cover with foil and bake until leeks just begin to soften, 8-10 minutes.

Remove from oven.  Add tomatoes and toss to combine.  Season both sides of the fish fillets with 1/2 tsp salt and 1/4 tsp pepper, place on top of the vegetables.

Cover dish and bake until fish is opaque throughout, 15-20 minutes.  Serve immediately.

Serves 4

We used sun-dried tomatoes just because we had them.
